These banana and chocolate chip cookies are a great way to use up those left over over-ripe bananas! Theres always the odd banana lingering around our house looking past its best, so i always pop it into the freezer to use another time. Great in smoothies, banana bread and these chewy cookies.
Ingredients
2 Ripe Bananas
415g Plain Flour
1 Tsp Baking Soda
220g Salted Butter
200g Light Brown Sugar
100g Granulated sugar
2 Tsp Vanilla Extract
150g Dark or Milk Chocolate Bar
Method
- Preheat oven to 200 degrees and line a baking tray with baking paper.
- Mash the 2 bananas in a small bowl.
- In another larger bowl, add the flour and baking soda, mix to fully combine.
- In another bowl add the butter, and both sugars. Using a hand mixer beat until light and fluffy.
- Add in the mashed bananas and the vanilla, keep beating on a medium setting until the mix is fully combined.
- Tip in the dry ingredients and mix until the flour in incorporated into the dough.
- Chop the chocolate into small chunks, it is nice to have a variety of sizes.
- Add the chocolate into the dough and stir using a spatula.
- Using your hands make small golf ball sized balls and place on the baking tray with atleast 2 inches apart.
- Bake in the oven for 10-12 minutes, until golden.
- Allow cookies, to cool. Enjoy!
