Raspberry Marshmallow Bites

These are a lovely half term bake, they’re easy to make, limited mess and super fun!

What you will need to make 18 squares :

280g Large Marshmallows (any colour)
150g Rice Crispies
40g Salted Butter
60g White Chocolate
30g Freeze Dried Raspberries (or sprinkles of choice)
28 x 28 cm square tin or equivalent

How to make :

  1. Melt butter in a large saucepan, on a low heat.
  2. Add marshmallows, stir until completely melted.
  3. Add the rice crispies and stir until fully coated, tip into square tin & press down firmly into tin, with spoon. Careful as the mix will be very warm!
  4. Put tin into fridge, wait until set.
  5. Remove from fridge, turn rice crispy bar out onto a chopping board.
  6. Place white chocolate into a bowl, microwave, remembering to stir every 20 seconds until the chocolate is fully melted.
  7. Drizzle white chocolate all over crispy bar and sprinkle with the freeze dried raspberry.
  8. Place back into the fridge if chocolate has not set, once set slice into 18 squares.
  9. ENJOY!
